Exploring a Cider Barn on a Hilltop

We will visit a cider barn in historic Middleburg in Northern Virginia, which offers small batch handcrafted cider and spirits.

At Mt. Defiance Cider Barn we can taste flights or get glasses of classic and craft ciders, sweet vermouth, or pommeau an alcoholic drink made in north-western France by mixing apple juice with apple brandy.

Mt. Defiance creates handcrafted, classic and craft spirits with a focus on the revival of classic spirits, that have their roots in both Colonial America and Europe, as the English settlers in America brought with them a love of hard cider.

Cider has been made in different regions of the United Kingdom where cider apples were grown since Roman times..

Cider is finally coming back into its own as America’s table drink, with two different styles — the traditional farm cider where classic cider apples are pressed and the juice fully fermented with only yeast added, to the craft cider makers who are influenced by the craft beer movement and infuse and co-ferment a blend of new and historic natural flavors into their ciders.
